1 tsp  coconut extract
0 1/4 cup  pineapple juice
1 cup  low carb baking mix
2 tbsp  Coconut, cream, canned
1 each  egg whites
1 1/2 tbsp  flaked unsweetened coconut
  1. Preheat oven to 400°F.
  2. Line 2 cookie sheets with parchment paper and set aside.
  3. In medium bowl, combine coconut extract, juice, baking mix, coconut cream, and egg white until well blended.
  4. Drop by rounded teaspoons onto prepared cookie sheets, yielding approximately 24 cookies.
  5. Sprinkle tops of cookies with coconut flakes.
  6. Bake 4 minutes or until bottoms are golden brown.
