0.3333 cup  canola oil
1 cup  Molasses, dark
1 1/4 cup  orange juice
1 tbsp  grated orange peel
2 1/2 cup  whole wheat flour
1 tsp  baking soda
1 tsp  ground cinnamon
2 tsp  ground ginger
0 1/2 tsp  salt
0 1/2 cup  seedless raisins
  1. Preheat oven to 350 degree F.
  2. Mix together wet ingredients in a large bowl.
  3. Using a medium bowl, sift together dry ingredients.
  4. Add raisins.
  5. Add dry ingredients to wet ingredients and mix well.
  6. Pour into a greased 9-by-13-inch pan and bake 40 minutes. Be sure not to overbake. Gingerbread will be moist.
