Ingredients Directions
  1. Prepare the rub by mixing all the rub ingredients in a small bowl.
  2. Rinse the chicken and pat it dry with paper towels. Brush both sides of each piece with some of the rub. Set aside for 15-30 minutes (for more intense flavor, cover and refrigerate for up to 24 hours before cooking).
  3. Place the chicken on a broiler pan coated with nonstick cooking spray. Broil 12-15 minutes, 6 inches under the preheated broiler, turning occasionally until the meat is browned. If grilling, grill the chicken in the same way over medium heat.
  4. Let the chicken cool for 5 minutes before slicing thinly against the grain. Set aside.
  5. Spread a quarter of the lettuce over each of 4 plates. Arrange some of the celery, oranges, and onion rings over the lettuce. Top each plate with a sliced chicken breast, cheese, and walnuts.
  6. Serve immediately with some of the dressing.
