2 cup  Flour, white, unbleached, enriched
4 tsp  Baking Powder, double acting
0 1/2 tsp  kosher salt
3 tbsp  brown sugar
0 1/2 tsp  ground allspice
0 1/4 g  Cheese, cheddar, mild, reduced fat
2 each  eggs
1 cup  soy milk
3 tbsp  canola oil
0 1/2 cup  unsweetened applesauce
  1. Preheat oven to 400 degrees F. Line a 12-cup muffin pan with paper muffin cups or oil, or spray with cooking spray, set aside.
  2. Combine in a large mixing bowl: flour, powder, salt, brown sugar, allspice, and cheese. In a separate bowl, combine remaining ingredients.
  3. Make a well in center of dry ingredients; pour in wet ingredients all at once. Blend until combined, leaving no dry spots, do not overmix. Fill muffin cups and bake 20 minutes. Serve warm.
