1 tsp  olive oil
2 cup  chopped green bell peppers
1 each  large onion
1 cup  fresh chopped celery
4 oz  Canadian bacon
2 each  medium garlic cloves
0.3333 cup  dried lentils
2 each  fresh tomatoes
2 quart  cold water
1 cup  Pasta, elbow twist, semolina, dry
0 1/2 tsp  salt
2 tsp  fresh oregano
0 1/4 tsp  black pepper
0 1/4 cup  grated parmesan cheese, low sodium
Directions
  1. Heat oil in a large saucepan over medium heat. Add pepper, onion, celery, bacon, and garlic and cook until vegetables are softened (approximately 5 minutes), stirring occasionally.
  2. Stir in lentils, tomatoes, and water. Cover and bring to a boil. Reduce heat and simmer 20 minutes.
  3. Add macaroni and simmer 10 minutes.
  4. Add salt, oregano, and pepper. Sprinkle with Parmesan and serve.
