3 lb  fresh whole beets
1 each  Onion, white, fresh, small, whole
2 tbsp  balsamic vinegar
1 tbsp  unsalted butter
1 pinch  black pepper
1 pinch  salt
1 pinch  grated orange peel
  1. Preheat oven to 400°F.
  2. Wrap beets in aluminum foil and place in shallow roasting pan. Add 1" water to pan.
  3. Roast until tender when pricked with knife, about 2 hours.
  4. Open foil packets and allow to cool to touch. Remove skins and place in food processor fitted with steel blade.
  5. Add onion and balsamic vinegar and process to smooth purée.
  6. Place beet purée in heavy saucepan and add butter. Gently reheat over low.
  7. Add pepper and salt to taste. Serve garnished with orange peel.
