1 each  medium garlic cloves
0 1/2 cup  white wine
1 tbsp  fresh lemon juice
1 tsp  olive oil
1 tbsp  fresh chopped red onion
0 1/4 tsp  ground thyme
0.125 tsp  black pepper
0 1/2 lb  boneless pork loin
  1. To make the marinade, combine all the ingredients (minus the pork) in a heavy, freezer-style plastic bag. Next, add the roast and marinade in the refrigerator for at least an hour, but as long as overnight.
  2. When ready to cook, preheat the oven to 350 degrees F. Then, remove the meat from the marinade and place on a rack in a roasting pan treated with nonstick spray.
  3. Roast for 20 to 30 minutes or until the meat thermometer reads 150 to 170 degrees, depending on how cooked you like your pork.
