Salad Ingredients
2 tsp  olive oil
0 1/4 cup  chopped pecans
1 tsp  sugar
0.125 tsp  ground cayenne (red pepper)
2 cup  Oranges, all types, fresh, sections

Citrus Vinaigrette
0 1/2 cup  orange juice
2 tbsp  fresh lemon juice
2 tbsp  olive oil
1 tbsp  low sodium soy sauce
1 tbsp  dijon mustard
1 tbsp  honey
  1. Heat the oil in a nonstick skillet over medium heat, and add the pecans. Sprinkle with the sugar and cayenne then saute for 2 minutes, or until the pecans begin to brown, and remove from heat and let cool. Use a large bowl, and mix the greens and Citrus Vinaigrette (see recipe below); toss gently, then toss with the oranges and prepared pecans, and serve immediately.
  2. For the Citrus Vinaigrette place the orange juice, lemon juice, olive oil, soy sauce, mustard, and honey in a blender, and process until smooth.
