0.3333 cup  cold water
1 cup  reduced fat baking mix
1 each  Pudding, pistachio, fat & sugar free, instant, serving
5 tbsp  sugar
1 each  egg whites
0 1/2 tsp  almond extract
  1. Preheat oven to 350 degrees F.
  2. Spray 2 cookie sheets with non-fat cooking spray and set aside.
  3. In a medium-sized bowl, mix all ingredients (except 1 tablespoon sugar) with a spoon until well mixed.
  4. Drop by rounded teaspoonfuls onto prepared cookie sheets.
  5. Evenly sprinkle cookies with remaining 1 tablespoon sugar.
  6. Bake for 8 minutes or until bottoms are lightly golden brown.
