1 tbsp  butter
0 1/2 lb  boneless skinless chicken breasts
0 1/2 cup  fresh chopped onion
0 1/2 cup  fresh chopped celery
1 each  medium garlic cloves
26 oz  canned unsalted diced tomatoes
1 cup  fresh mushroom slices
0 1/2 cup  chopped parsley
1 each  small green bell peppers
1 tsp  dried basil
1 tsp  ground oregano
0 1/4 tsp  salt
0 1/4 tsp  black pepper
0.125 tsp  ground red pepper (cayenne)
  1. In large skillet, melt butter over low heat. Add chicken breasts, cook until lightly browned.
  2. Remove chicken from skillet. Chop. Set aside.
  3. Add onion, celery, and garlic to warm skillet. Sauté vegetables until tender.
  4. Return the chicken to skillet. Add undrained tomatoes, mushrooms, parsley, green peppers, basil, oregano, salt, pepper, and cayenne pepper.
  5. Cover and simmer for 20 minutes. Serve.
