0.3333 cup  fresh lemon juice
0 1/4 cup  low sodium soy sauce
1 each  medium garlic cloves
0 1/2 tsp  salt
0 1/2 tsp  ground ginger
0 1/4 tsp  black pepper
2 lb  boneless skinless chicken breasts
1 each  cooking spray
  1. In 13" x 9" x 2" baking dish, stir together lemon juice, soy sauce, minced garlic, salt, ginger, and black pepper.
  2. Add the chicken, cover, and marinate in refrigerator for 2 to 3 hours, turning once.
  3. Preheat oven 325°F.
  4. Coat rack of roasting pan with cooking spray.
  5. Drain and discard the marinade; transfer the chicken roasting pan.
  6. Bake the chicken for 1 hour at 325°F or until internal temperature reaches at least 180°F.
  7. Remove chicken from oven and let rest for 5 minutes. Slice and serve.
