1 each  cooking spray, for baking
0 3/4 cup  canned pineapple chunks, drained
1 each  eggs
0 1/2 cup  unsweetened pineapple juice
0 1/4 tsp  orange extract
1 tbsp  vegetable oil
1 1/2 cup  white all purpose flour
1 tsp  baking soda
1 tsp  low sodium baking powder
Directions
  1. Preheat oven to 350 degrees F. Mist an 8-inch square baking pan with cooking spray.
  2. Measure out 1/4 cup of the pineapple chunks. Puree until smooth in a food processor or blender. In the bowl of an electric mixer, beat together pureed pineapple, egg, pineapple juice, orange extract, and oil.
  3. Add the flour, baking soda, and powder and beat again.
  4. Stir in the remaining 1/2 cup pineapple chunks.
  5. Spoon the batter into the prepared pan. Smooth the top and bake for 25 minutes until a knife inserted in the middle comes out clean.
  6. Cool and cut into 25 squares.
