3 tbsp  fresh cilantro
2 tbsp  fresh lime juice
1 tbsp  minced garlic
1 tbsp  fresh ginger root
1 tbsp  sliced jalapeno pepper
1 1/2 lb  orange roughy fillet
1 each  medium limes
  1. In a small bowl, combine lime juice, ginger, and peppers. Lightly oil grid to prevent sticking.
  2. Grill fish on covered grill over hot briquets 5 minutes. Turn; spread cilantro mixture on fish. Grill 3 to 5 minutes longer or until fish flakes easily when tested with fork.
  3. Serve with lime wedges.
