0 3/4 lb  Potatoes, peeled, cooked, diced
0 1/4 cup  low fat buttermilk
2 tsp  Butter, unsalted
1 pinch  salt and pepper
  1. Begin by partially mashing the potatoes in a large bowl. Add the warm buttermilk and mix well, mashing the potatoes completely.
  2. If using, add salt and pepper and then add the butter.
