3 1/2 lb  boneless skinless chicken breasts
0 1/4 tsp  salt
0 1/4 tsp  black pepper
3 tbsp  capers, drained
1 tbsp  fresh lemon peel
0 1/2 cup  low sodium chicken broth
8 oz  low fat cream cheese
1 tbsp  cornstarch
1 tbsp  cold water
  1. Sprinkle chicken with salt and pepper. Place chicken in a 4 to 5 quart slow cooker. Sprinkle with capers and lemon peel. Add chicken broth.
  2. Cover and cook on low heat setting for 5 to 6 hours or on high heat setting for 2 1/2 to 3 hours.
  3. Transfer chicken to a serving platter, reserving the cooking liquid. Cover the chicken with foil to keep warm.
  4. Pour cooking liquid into a glass measuring cup. Measure 1 cup liquid.
  5. In a medium saucepan whisk together the 1 cup liquid and cream cheese until well mixed.
  6. In a small bowl combine cornstarch and water.
  7. Whisk cornstarch mixture into cream cheese mixture. Cook and stir over medium heat until thickened and bubbly. Cook and stir for 2 minutes more.
  8. Serve sauce over chicken.
