8 each  whole loin pork chops
1 each  cooking spray
1 tbsp  canola oil
0 1/2 cup  beef broth
1 tbsp  fresh ginger root
1 tbsp  low sodium soy sauce
2 tsp  lime peel zest
0 1/2 tsp  hot red pepper flakes
1 cup  fresh coconut milk
2 tbsp  cornstarch
2 tbsp  fresh cilantro
Directions
  1. Trim visible fat from pork chops.
  2. Coat large skillet with cooking spray, cook half of the chops in hot skillet over medium-high heat until brown on both sides. Place in a 4- to 5-quart slow cooker. Add oil to skillet. Brown remaining chops in hot oil. Drain off fat; set aside.
  3. In small bowl, combine beef broth, ginger, soy sauce, lime peel, and crushed red pepper. Pour half of the broth mixture over chops in cooker. Place remaining chops in cooker; pour remaining broth mixture over all.
  4. Cover and cook on low-heat setting for 5 hours or on high-heat setting for 2-1/2 hours.
  5. Transfer pork chops to serving platter, reserving cooking liquid. Cover chops with foil to keep warm.
  6. If using low-heat setting, turn to high-heat setting.
  7. For sauce, strain cooking liquid and skim off fat. Return liquid to slow cooker.
  8. In a small bowl, combine coconut milk, cornstarch and cilantro. Add to liquid in cooker. Cover and cook for 15 minutes more. Serve sauce over chops.
