2 each  large red bell peppers
1 cup  fresh chopped celery
0 1/2 cup  fresh chopped onion
8 each  whole loin pork chops
0 1/2 tsp  garlic salt
0 1/4 tsp  black pepper
2 tbsp  canola oil
0 1/4 cup  chicken broth, low sodium
0 1/4 cup  orange juice
1 tbsp  canned chipotle peppers
0 1/2 tsp  ground oregano
  1. In a 4 to 5 quart slow cooker, place sweet peppers, celery, and onions; set aside. Season pork with garlic salt and black pepper. Cook chops in a 12-inch skillet, half at a time in hot oil over medium heat until brown on both sides. Drain off fat. Add chops to cooker.
  2. Combine in a small bowl chicken broth, orange juice, chipotle peppers, and oregano. Pour over mixture in cooker.
  3. Cover and cook on low-heat setting for 6 to 7 hours, or on high-heat setting for 3 to 3 1/2 hours. Using a slotted spoon transfer chops and vegetables to a serving platter; discard cooking liquid.
