2 lb  Pork, roast, top loin, raw
1 cup  tap water
2 cup  fresh sliced parsnip
3 each  medium carrots
2 each  medium onions
1 each  medium apples
0 1/2 cup  fresh chopped celery
3 tbsp  quick cooking tapioca
1 cup  apple cider
1 tsp  salt
1 tsp  caraway seeds
0 1/4 cup  black pepper
1 each  medium celery stalks
  1. Peel parsnips, carrots, and onion. Cut into large pieces. Core and cut apple into large pieces. Place in bottom of slow cooker.
  2. Place roast on top of vegetables. Sprinkle celery around roast.
  3. In small bowl, combine water and apple cider. Stir in tapioca, salt, caraway seeds, and pepper. Pour liquid around roast.
  4. Cover and cook on low heat setting for 10 to 12 hours or high heat setting for 5 to 6 hours.
  5. Garnish individual servings with celery leaves.
