Ingredients Directions
  1. Slice zucchini in half lengthwise, then cut into 1" pieces.
  2. Core and remove seeds and membrane from red bell pepper. Cut into 1" pieces.
  3. In large plastic resealable bag, place chicken, zucchini, mushrooms, and bell peppers.
  4. Add soy sauce, sherry, oil, and garlic to bag. Seal bag.
  5. Turn bag to coat and marinate in refrigerator at least 30 minutes up to 4 hours.
  6. Place twelve 12" skewers in water and let soak 20 minutes.
  7. Divide and arrange chicken, zucchini, mushrooms, and red bell peppers on each of twelve skewers.
  8. Coat broiler pan with cooking spray. Place kabobs on broiler pan.
  9. Place kabobs 5-6" from heat and broil for 5 minutes.
  10. Turn kabobs and broil kabobs for an additional 5 minutes or until chicken is no longer pink.
  11. Transfer kabobs to serving platter.
