1 each  medium head cabbage
1 tbsp  quick cooking tapioca
3 lb  whole lean beef brisket
1 1/2 tsp  ground allspice
1 1/2 tsp  ground thyme
1 tsp  black pepper
0 1/2 tsp  salt
0 1/4 tsp  ground sage
0 1/2 tsp  paprika
0 1/4 cup  cold water
2 tbsp  dijon mustard
1 tbsp  horseradish
  1. In 4-1/2 or 5 quart slow cooker, place cabbage wedges. Sprinkle with tapioca.
  2. Remove fat from meat. Place meat on top of cabbage in cooker. Sprinkle with allspice, thyme, pepper, salt, sage, and paprika.
  3. Combine in a small bowl the water, mustard, and horseradish. Pour over mixture in cooker.
  4. Cover and cook on low-heat setting for 10 to 12 hours or on high-heat setting for 5 to 6 hours.
