1 tbsp  olive oil
2 each  medium celery stalk
2 each  medium onions
2 each  medium garlic cloves
56 oz  Tomatoes, whole, peeled, unsalted, canned
0 1/2 cup  white wine
1 tsp  dried basil
1 tsp  oregano leaves
0 1/2 tsp  ground thyme
0 1/2 tsp  black pepper
0 1/4 tsp  salt
2 lb  flounder fillet
0 1/2 cup  chopped parsley
  1. Heat oil in large nonstick pan.
  2. Add celery, onions, garlic, cook until soft -- about 5 minutes. Stir occasionally.
  3. Add in tomatoes, wine, basil, oregano, thyme, pepper, and salt. Bring to a boil.
  4. Simmer, covered for 25 minutes.
  5. Raise heat and add in fish and parsley. Bring to a boil.
  6. Lower heat and cook uncovered for about 5 minutes. Fish should be opaque.
