3 tbsp  fresh basil
0 1/2 tsp  lemon zest
2 tbsp  fresh lemon juice
2 tsp  honey
1 tsp  extra virgin olive oil
1 pinch  black pepper
0 1/4 tsp  salt
2 each  medium zucchini
0 3/4 cup  chopped red bell peppers
  1. In small jar combine basil, lemon zest, lemon juice, honey, oil, pepper, and salt. Cover tightly, and shake vigorously to blend. Set aside.
  2. Slice zucchini lengthwise into thin strips, using a vegetable peeler.
  3. In large bowl combine dressing, zucchini, and red pepper; toss gently. Serve with slotted spoon.
