1 each  small cucumber, peeled
0 1/2 tsp  salt
1 tbsp  chopped parsley
2 tbsp  plain nonfat yogurt
2 tbsp  fat free milk
6 cup  romaine lettuce
  1. Peel the cucumber, grate coarsely, and sprinkle with salt.
  2. Refrigerate for 30 minutes.
  3. Drain as much juice from the cucumber as possible.
  4. Combine parsley, dressing, yogurt, and milk with drained cucumbers. Mix together.
  5. Tear lettuce into small bite-size pieces and toss with cucumber mixture before serving.
