3 each  medium apples
3 each  medium pears
1 1/2 tbsp  fresh lemon juice
2 cup  cold water
1 1/2 cup  Cheese, ricotta, partially skim
6 tsp  unpacked light brown sugar
1 1/2 tbsp  brandy
0 1/4 tsp  ground cinnamon
  1. Core and slice apples and pears in wedges (do not peel). Place in a shallow bowl and cover with lemon water. Cover and chill until ready to serve.
  2. In a small bowl, combine remaining ingredients. Cover and refrigerate until ready to serve.
  3. To serve, place 1/4 cup of the ricotta cheese mixture in the center of each of 6 dessert plates. Surround with an equal portion of apple and pears slices.
