1 each  cooking spray
1 1/2 cup  white all purpose flour
1 cup  All-Bran cereal
2 tbsp  grated Parmesan cheese
1 tbsp  sugar
0 1/2 tsp  low sodium baking powder
0 1/4 tsp  baking soda
1 tbsp  fresh basil
0 1/4 cup  liquid egg substitute
1 cup  low fat buttermilk
0 1/4 cup  vegetable oil
Directions
  1. Preheat the oven to 400 degrees F, and then lightly coat twelve 2 1/2-inch muffin cups with cooking spray; set aside.
  2. Stir together flour, cereal, Parmesan cheese, sugar, baking powder, soda, and desired herb in a large bowl. Make a well in the center of flour mixture.
  3. Beat egg product with a whisk in a small bow; stir in buttermilk or sour milk and cooking oil.
  4. Add buttermilk mixture all at once to flour mixture, and then using a fork, stir just until moistened (batter should be lumpy).
  5. Divide batter among muffin cups, and then bake 18 to 20 minutes or until golden brown.
  6. Cool in muffin cups on a wire rack for 5 minutes, and then remove from muffin cups; serve warm.
