3 each  medium celery stalk
1 each  Cucumber, fresh, medium
1 tbsp  low sodium soy sauce
1 tbsp  rice vinegar
1 tbsp  canola oil
1 each  medium garlic cloves
0 1/4 tsp  salt
0.125 tsp  hot red pepper flakes
0 1/4 tsp  sesame oil
  1. Combine the celery and cucumber in a bowl.
  2. In a small cup, whisk together the soy sauce, vinegar, oil, garlic, salt (if using), and red pepper flakes.
  3. Toss dressing with vegetables and refrigerate for 10 minutes.
  4. Before serving sprinkle with sesame oil and toss again.
  5. Divide between 4 salad plates.
