6 cup  fresh chopped arugula
2 oz  grated Parmesan cheese
0 1/2 cup  fresh cherry tomatoes
3 tbsp  olive oil
3 tbsp  fresh lemon juice
1 pinch  black pepper
  1. Wash arugula. Pat dry.
  2. Remove and discard stem ends.
  3. Put half of cheese in salad bowl. Add cherry tomatoes and arugula. Cover and chill until ready to serve.
  4. When ready to serve, whisk olive oil and lemon juice in small bowl.
  5. Drizzle over the arugula and toss lightly.
  6. Sprinkle with remaining cheese and fresh pepper.
  7. Serve immediately.
