2 tbsp  olive oil
0 1/2 cup  fresh chopped red onion
2 1/2 cup  red skinned potatoes
2 cup  frozen cut green beans
0 1/2 tsp  italian seasoning
0 1/2 tsp  garlic salt
14 oz  firm tofu
2 each  roma tomatoes
1 each  large hard-boiled eggs
Directions
  1. Using a 12-inch skillet, heat oil over medium-high heat. Cook onion in oil 2 minutes, stirring frequently.
  2. Stir in potatoes and reduce heat to medium-low. Cover and cook 10 minutes, stirring occasionally, until potatoes are tender.
  3. Stir in green beans, Italian seasoning, and garlic salt. Cover and cook 6 minutes, stirring until beans are tender and potatoes are light golden brown.
  4. Stir in tofu and tomatoes. Cook 2 to 3 minutes, stirring gently, just until hot. Sprinkle each serving with egg.
