1 tbsp  canola oil
2 each  large onion
0 1/2 tbsp  fresh rosemary
0 1/2 tbsp  fresh thyme
2 tbsp  oyster sauce
3 each  medium apples
6 cup  low fat unsalted chicken broth
1 pinch  salt
1 pinch  black pepper
0.3333 cup  low fat cheddar cheese, shredded
  1. Heat the oil in a large pot over medium heat. Add onions, rosemary, and thyme.
  2. Saute until onions wilt, about 3 minutes, stirring frequently.
  3. Mix in the oyster sauce, apples, and broth. Bring to a boil, lower heat, and simmer, partially covered, for 15 minutes. Taste and add salt (if using) and pepper.
  4. Ladle hot into soup bowl, sprinkling each portion with some of the cheese. Serve at once.
