0 1/2 cup  Baking Mix, dry
12 each  Crackers, saltines, low sodium, fat free
1 tsp  seasoned salt
0 1/4 tsp  black pepper
1 each  eggs
2 tbsp  cold water
8 each  whole loin lean pork chops
  1. In a medium-size bowl, mix baking mix, cracker crumbs, seasoned salt, and pepper. Using a separate bowl, mix egg and water.
  2. Dip pork into egg mixture, then coat with baking mix mixture.
  3. Spray 12-inch nonstick skillet with cooking spray, heat over medium-high heat. Cook pork in skillet 8 to 10 minutes, turning once, until slightly pink in center.
