1 tbsp  vegetable oil
1 cup  fresh chopped celery
1 each  chopped green bell peppers
1 each  medium zucchini
4 each  fresh tomatoes
1 cup  fat free reduced sodium chicken broth
1 tbsp  cornstarch
0 1/4 tsp  salt
0 1/2 tsp  ground ginger
0 1/4 tsp  black pepper
  1. Place oil in a heavy saucepan and bring to a frying temperature.
  2. Add celery, peppers, and zucchini to pan, and then cook and stir over moderate heat for 5 minutes.
  3. Wash the tomatoes, remove stems, and cut into wedges before adding to vegetable mixture.
  4. Cook and stir until tomatoes are hot.
  5. Stir together broth, cornstarch, and seasonings until smooth. Then add to vegetables and cook for about 2 minutes.
  6. Serve hot!
