1 tsp  lime peel zest
0 1/4 cup  fresh lime juice
1 tbsp  balsamic vinegar
2 each  medium garlic cloves
0 1/2 tsp  salt
0 1/2 tsp  black pepper
0 1/4 tsp  ground coriander
0 1/4 tsp  ground cumin
1 lb  Beef, top sirloin steak, lean, raw
2 tsp  canola oil
1 each  large onion
1 each  medium red bell peppers
1 each  chopped green bell peppers
1 each  whole jalapeno pepper
6 each  Tortilla, flour
0.3333 cup  hot pepper sauce
1 cup  Yogurt, plain, nonfat
Directions
  1. In a small bowl, combine marinade ingredients.
  2. Thinly slice meat across the grain and lay in a shallow glass baking dish. Pour over marinade and toss to evenly coat.
  3. Cover and refrigerate for at least 30 minutes or until the next day, turning occasionally.
  4. Place a wok or heavy nonstick skillet over medium-high heat. Add oil and when wok is hot enough to make a drop of water sizzle, add onions and peppers to the pan. Stir-fry for 4 to 5 minutes, until vegetables are tender.
  5. Raise heat to high. Add meat and marinade to the wok and stir-fry until meat is lightly browned, about 4 to 5 minutes.
  6. To serve, evenly distribute the meat and vegetables between the tortillas. Add hot sauce and yogurt to taste. Roll up tortillas to enclose filling..
