2 each  medium zucchini
2 each  Squash, summer, fresh, medium, FDA
1 tsp  Margarine, 80% fat, unsalted
1 each  medium garlic cloves
2 tsp  fresh lemon juice
0 1/4 tsp  salt
0.125 tsp  black pepper
1 pinch  ground nutmeg
  1. Using a sharp vegetable peeler, slice the squash lengthwise into thin ribbons.
  2. Place the ribbons in a large microwave-safe dish with a lid. Cook on HIGH for 1 to 2 minutes, until wilted.
  3. In a glass measuring cup, mix margarine, garlic, and lemon juice. Microwave on HIGH for 20 seconds, until margarine is melted.
  4. Drizzle margarine mixture over squash ribbons and add salt (if using), pepper, and nutmeg. Toss well and serve.
