Ingredients Directions
  1. Preheat oven to 375 degrees.
  2. Sift the flour, sugar substitute, baking powder, baking soda, and salt together in a large bowl. Stir in the coconut, and make a well in the center of the mixture.
  3. In a separate bowl, combine the bananas, margarine, egg, orange rind, and juice. Add the mixture to the dry ingredients and stir just until the dry ingredients are moistened.
  4. Spoon the batter into muffin tins coated with cooking spray, filling each tin roughly 2/3 of the way full. Bake the muffins for 25 to 30 minutes, or until they are lightly browned.
