1 each  fennel bulb
1 1/4 lb  medium potatoes
1 each  medium onions
1 tbsp  dried parsley
2 tsp  vegetable oil
0 1/4 tsp  salt
0.125 tsp  white pepper
1 each  cooking spray
Directions
  1. Preheat oven to 400 degrees F.
  2. In a large bowl combine fennel slices, potato, onion, parsley, vegetable oil, salt, and pepper; toss gently.
  3. Arrange mixture in a single layer on a 15x10x1-inch jellyroll pan coated with cooking spray.
  4. Bake for 30 to 35 minutes or until potato is crisp on all sides, stirring occasionally. Serve immediately.
