3 each  medium zucchini
3 each  Squash, summer, all types, fresh, medium
1 each  Onion, sweet, fresh
6 each  medium garlic cloves
1 tbsp  olive oil
0 1/2 tsp  salt
0 1/4 tsp  black pepper
1 each  cooking spray
  1. Preheat oven to 450°F.
  2. Slice and quarter zucchini, yellow squash, and onion. Peel and mince garlic cloves.
  3. In medium bowl combine zucchini, yellow squash, sweet onion, garlic, oil, salt, and pepper. Toss well.
  4. Lightly coat shallow roasting pan with cooking spray.
  5. Arrange squash mixture evenly in pan and bake 30 minutes or until vegetables are tender, stirring every 10 minutes.
