2 each  medium cucumber
0 3/4 cup  plain yogurt, whole milk
2 tsp  fresh lemon juice
2 tbsp  fresh mint
1 tsp  minced garlic
1/4 tsp  salt
  1. Peel cucumbers and remove seeds. Dice.
  2. Finely chop mint leaves.
  3. In small bowl, combine cucumbers, yogurt, lemon juice, mint, garlic, and salt.
  4. Stir. Chill until ready to serve. Can be made up to 8 hours ahead. Stir before serving.
