1 tbsp  packed dark brown sugar
1 tbsp  fresh thyme
1 tsp  chili powder
1 tsp  fresh rosemary
0.125 tsp  ground cayenne (red pepper)
2 lb  top loin pork roast
1 tbsp  fresh rosemary
Directions
  1. Preheat the oven to 325 degrees F, and combine the brown sugar, thyme, chili powder, snipped or dried rosemary, and cayenne pepper in a small bowl.
  2. Sprinkle the brown sugar mixture evenly over roast, then rub the mixture in with your fingers.
  3. Place the roast on a rack in a shallow roasting pan, and insert an oven meat thermometer into center of the roast.
  4. Roast for 1.25 to 1.5 hours or until thermometer registers 155 degrees F.
  5. Cover with foil and let stand for 15 minutes. The temperature of the meat after standing should be 160 degrees F.
  6. If desired, garnish with rosemary sprigs.
