Ingredients Directions
  1. Begin by first discarding any tough stalks from the spinach.
  2. Next, pour the oil into a large frying pan and add the sausage, cooking it gently for roughly 3 minutes. When cooked, the slices should start to shrivel slightly and begin to change color.
  3. Add the spinach leaves to the pan and then remove the pan from the heat.
  4. Toss the spinach in the warm oil just until it starts to wilt.
  5. Add the sherry vinegar and a little seasoning, if desired.
  6. Toss the ingredients briefly to combine, and serve immediately while still warm.
