3 each  ears of corn
1 each  medium garlic cloves
0 1/2 cup  fresh cilantro
1 each  Chili Peppers, green, whole
1 each  scallions
1 tbsp  soy sauce
0 3/4 cup  white all purpose flour
2 each  eggs
4 tbsp  cold water
0.125 cup  vegetable oil
1 pinch  salt and pepper
1 tbsp  chili sauce
  1. Begin by slicing the kernels from the cobs with a sharp knife using a downward stroke. Then, rinse the corn to remove any debris and then place it in a bowl.
  2. Add the garlic, chopped cilantro, red or green chili, scallion, soy sauce, flour, eggs, and water to the corn, mix well to combine.
  3. Season with salt and pepper to your taste, and then mix well again. When well combined, the mixture should be firm enough to hold its shape, but not stiff.
  4. After heating the oil in a large frying pan, add spoonfuls of the corn mixture to the pan, gently spreading each one out with the back of the spoon to shape the fritters. Cook for 1 to 2 minutes on each side.
  5. Drain the first batch of fritters on some paper towels and then transfer them to a foil covered dish to keep them warm while frying more fritters in the same way.
  6. Serve the fritters hot with the sweet chili sauce.
