2 each  fresh tomatoes
1 each  medium cucumber
0 1/2 each  chopped green bell peppers
2 tbsp  fresh chopped celery
2 tbsp  minced onion
2 tbsp  fresh cilantro
2 tbsp  light mayonnaise
1 each  medium avocadoes
4 each  Tortilla, flour, 6.5"
  1. In a medium bowl, mix tomatoes, cucumber, bell pepper, celery, red onion, cilantro, and mayonnaise.
  2. Cover and chill vegetables until ready to use.
  3. Just before serving, prepare the avocado and stir into vegetable mixture. Using a slotted spoon to drain off any liquid, equally split the mixture between the 4 tortillas, placing the vegetables just off-center.
  4. Roll up and cut each burrito in half. Serve immediately.
