2 each  Cucumber, fresh, medium
6 each  fresh tomatoes
2 tbsp  olive oil
0 1/4 cup  fresh cilantro
1 tsp  ground cumin
1 pinch  black pepper
  1. Arrange the cucumber and tomato slices in overlapping circles on a large serving platter.
  2. In a glass measuring cup, whisk together the oil, lemon juice, cilantro, cumin, and pepper.
  3. Drizzle lemon-oil dressing over the vegetables.
  4. Cover and refrigerate until ready to serve.
