2 cup  sliced carrots
0 1/2 cup  fresh chopped celery
8 oz  Pineapple, tidbits, canned, with juice
1 tbsp  vinegar
2 tsp  cornstarch
1 tsp  light soy sauce
0.125 tsp  salt
2 tbsp  Margarine, 80% fat, unsalted
0 1/4 cup  fresh chopped green onion
0 1/4 cup  Equal packets
Directions
  1. Cook carrots and celery in medium saucepan in small amount of water for about 8 minutes or until tender. Then, drain and set aside.
  2. Add enough water to reserved pineapple juice to make 1/2 cup liquid. Stir in vinegar, cornstarch, soy sauce, and salt.
  3. Cook in medium saucepan until liquid thickens, stirring frequently.
  4. Add butter, drained pineapple, and onions, and continue stirring until all ingredients are heated.
  5. Add drained carrots and celery, then cook for about 2 minutes and stir in Equal.
