6 cup  fresh baby spinach
1 oz  shredded cheddar cheese
1 each  large pears
2 tbsp  slivered almonds
2 tbsp  olive oil
1 1/2 tbsp  balsamic vinegar
1 tbsp  cold water
0 1/2 tsp  dijon mustard
1 tsp  fresh tarragon
1 pinch  black pepper
  1. Evenly divide spinach between 4 salad plates.
  2. Sprinkle cheese over spinach and arrange pears on each plate.
  3. Sprinkle salad with almonds.
  4. In small cup, whisk together remaining ingredients to make dressing.
  5. Drizzle dressing over each salad.
