1 each  cooking spray
0 3/4 cup  bread crumbs
0 1/4 cup  grated Parmesan cheese
0 1/4 cup  canola oil
2 tbsp  Mustard, dijon
6 each  boneless skinless chicken breasts
  1. Heat oven to 375 degrees F. Coat bottom and sides of 13 x 9 x 2 baking dish with cooking spray.
  2. In a large resealable plastic food-storage bag, mix bread crumbs and cheese.
  3. Mix oil and mustard in shallow dish.
  4. Dip chicken into oil mixture, then shake in bag to coat with crumb mixture.
  5. Place in pan.
  6. Bake uncovered 20 to 25 minutes, turning once, until juice of chicken is no longer pink when centers of thickest pieces are cut.
