12 piece  100% whole grain bread
1 tbsp  extra virgin olive oil
1 each  large tomato
3 tbsp  fresh basil
1 tbsp  canned black olives
0 1/2 tsp  salt
0 1/2 tsp  black pepper
12 oz  shredded mozzarella cheese
  1. Heat oven to 375°F.
  2. Place bread slices on ungreased cookie sheet. Toast in preheated oven 3-5 minutes. If the bottom side of bread is moist, turn slice over and toast 3-5 minutes more.
  3. Remove from oven. Drizzle 1/4 teaspoon oil over each bread slice. Set aside.
  4. In small bowl, mix tomato, basil, olives, salt, and pepper.
  5. Spread tomato mixture evenly over bread slices.
  6. Sprinkle 1 oz.. cheese on each slice.
  7. Bake approximately 8 minutes until cheese is melted. Serve hot.
