  1. Begin by preheating your oven to 375 degrees F.
  2. Meanwhile, put the cherry tomatoes in a small roasting pan and drizzle with 2 tablespoons of the olive oil.
  3. Season the tomatoes with the salt and pepper and then roast for 10 to 15 minutes, shaking the pan gently once of twice so that the tomatoes cook evenly on all sides. When the tomatoes are tender and slightly charred, remove from the oven and set aside.
  4. While the tomatoes are cooking heat a pan on high heat and brush the sardine fillets with the remaining oil. Grill them for 4 to 5 minutes on each side, or until cooked through.
  5. To serve, split the focaccia in half horizontally and then cut each piece in half to make four equal pieces.
  6. Toast the cut side and top with the sardines and tomatoes and an extra drizzle of olive oil. Season with the salt and pepper.
