1 cup  cold water
1 each  olive oil cooking spray
3 each  egg whites
1 tbsp  salsa
1 pinch  salt
1 pinch  black pepper
  1. In 10" skillet, boil place 1 cup water and bring to boil.
  2. Coat 3 ramekins or poacher inserts with cooking spray.
  3. Place 1 egg white in each poacher insert or bowl. Place into boiling water. Reduce heat to low. Cover.
  4. Cook 7 minutes until egg whites are entirely set.
  5. Pass knife carefully around inner edges of poacher inserts or bowls to loosen egg whites.
  6. In small serving bowl, place salsa. Turn poached egg whites onto salsa, season with salt and pepper. Serve immediately.
