5 cup  fresh baby spinach
4 oz  canned water chestnuts
0 1/2 cup  canola oil
2 tbsp  orange juice
3 tbsp  white wine vinegar
1 tsp  sweetener (sugar substitute)
1 tbsp  dijon mustard
0.125 tsp  salt
1 pinch  black pepper
15 oz  Del Monte No Sugar Added Mandarin Oranges
  1. Tear spinach into bite-size pieces.
  2. In salad bowl, arrange spinach, oranges, and water chestnuts.
  3. Thoroughly blend remaining ingredients and drizzle over salad as desired.
