0 1/2 cup  Rice, arborio, white, dry
1.3333 cup  fat free milk
2 each  medium pears
0 1/4 cup  fresh lemon juice
1 tsp  fresh lemon peel
3 tbsp  sweetener (sugar substitute)
1 tbsp  packed light brown sugar
0.125 tsp  ground cinnamon
  1. In a small saucepan, mix arborio rice and skim milk. Bring to a boil.
  2. Reduce heat, cover, and simmer, until rice is tender. This should take approx. 18 minutes. Drain off any milk which has not been absorbed.
  3. Preheat oven to 400 degrees.
  4. In a bowl, combine pears, lemon juice, lemon zest, and sugar substitute. Toss to coat evenly. Stir in the cooked rice.
  5. Move mixture to a shallow baking dish and dust with brown sugar and cinnamon. Bake until heated throughout, roughly 15 minutes.
  6. Serve baked pudding in dessert bowls immediately.
